BRAISED ROCKFISH WITH BACON ROASTED CLAMS AND ARUGULA PISTOU

WILD Virginia Rockfish (Morone Saxatilis) is known to the rest of the world and striped sea bass.  Not to be confused with Pacific Rockfish,  who more closely resembles red grouper in taste and texture, Wild Virginia Rockfish has a meaty texture and is well received at Millstone throughout the season.


KEY LIME PIE

DON'T LET ANYONE FOOL YOU.  This pie is not supposed to be green, have toasted meringue on top or even be covered with chocolate cookie crumbs or "sauce" to be proper.  Rated one of the top 6 desserts in Roanoke by Roanoker magazine food critic David Tenzer (wait, we're not in Roanoke!), come see why Chef Proprietor Melanie Srsic can't keep this one in house.

WINE CORNER


WINE OF THE MONTH: MONTEPULCIANO D'ABRUZZO

THIS WINE COMES FROM the south central part of Italy on the western side of the boot.  Montepulciano d'Abruzzo is the name of the grape and the region (the Abruzzi).  A nice, fruity alternative to the Pinot Noir craze, we offer this by the glass on our wine list.  We also like it because this is where Jared's maternal great grandfather was born.
Here are the tasting notes from the current year's vintage (2005): "The wine shows a deep ruby red color and nuances of ruby red, little transparency. The nose reveals intense, clean and pleasing aromas of black cherry, blueberry, plum, carob and violet followed by pleasing aromas of walnut-husk. In the mouth has good correspondence to the nose, good balance, agreeable tannins, good body and intense flavors. The finish is persistent with flavors of black cherry and plum. "
